Sort of sounds like you are writing a paper on Mustangs!  I only wish you had put all your questions into 1 post because I have to answer each one individually.  

Anyhow, in the horse world there is little difference between mares and stallions (females and males).  Much depends upon the genetic make-up of the horse even within recognized breeds of horses.  Some lines produce larger/smaller animals than other lines.  But a brother and sister of the same breeding line will generally be pretty close to the same size and weight.
