My two rats.

I just got two rats, one fancy and one albino. They seem to get along great, as they have been together most of their short lives. I take them out several times a day and try to interact with them and give them treats, etc. However, they never seem interested in me and often try to squirm away. Before getting them I did TONS of research and read how they were supposed to be awesome pets and love human interaction and how I should be able to even train them. Am I doing something wrong?

They just need time. Just like people, rats can be shy in new situations and probably haven't gotten used to you a whole lot - they may not have been handled at their previous home (especially not if it was a pet store). Keep working with them, offer them treats and kind attention, and eventually they'll realize you're not trying to kill them.
