Question
I have had my 5 year old citron for a month.  I love him.
He is affectionate and fun.  But sometimes when I hold him or even in his cage.  He does a kind of crouch and shivers.  And when I hold him close I also feel him shiver. Otherwise he eats and drinks well and  enjoys his toys.

Answer
A bird in a new environment may shake more than usual when under stress, unsure or in temps that are too warm as well as too cold. This kind of shaking is also pretty obvious in macaws (they also 'blush') and a number of other parrots.

The crouch is typical 'baby bird' behavior, a submissive stance that may also happen when the bird is stressed or unsure. Birds assume this position for mates too - ready to be fed by them or groomed (or both).

It's important to note that both of these behaviors may also be symptoms of illness.  Has your bird been checked by a vet?  I strongly suggest a well bird check up that includes DNA screening for any potential disease - no matter where our birds come from, no matter how 'sure' I am of the background, I insist on having the results myself, first hand.  They really aren't that expensive and the peace of mind is priceless.

Also - knowing you've got a vet to go to in the middle of the night or on a holiday - in any case of emergency is vital.  There is absolutely nothing worse than having a very sick and failing bird in your hands and nowhere to take them, no one to turn to.
My birds are 'well bird' checked twice a year because it's just nice to see the vet and know she knows us by name right away when we call.

Your Citron should be with you another 50-60 or more years !  Congratulations on this new, lifelong companion.
