Question
we were given a white toy poodle at Christmas because the woman that had her could no longer take care of her.  She is a doll.  We were told she was 2 yrs old but she acts like she has a lot of puppy in her yet.  She is a very picky eater.  She likes certain ceasar foods but not all.  She doesn't like dry at all and i am concerned she needs to eat something crunchy.  i have tried different kinds but to no avail.  my biggest concern at the moment though is that when we got her, her belly skin was really pink.  over the last couple of months, her underskin is turning a dark grey color all over.  no spots just all over.  is this normal?

Your dogs skin becoming darker is due to her getting more pigment in that area of her skin and isn't a cause for concern.  Her hair will still continue to grow in white.  I am not sure what causes the pigment to darken, but can assure you that it won't hurt her.  

As to her needing to eat some dry food, I agree that its in her best interest to eat the dry food.  Chewing on the crunchy food will help scrape tartar off her teeth, cleaning them like a toothbrush does.  
You might try mixing her Caesar food in with her dry food to see if this will help her eat it.  Offer her this mix for a few days, and don't be quick to go back to feeding her just the wet food unless she won't eat the mixture for at least 3 days.  When she gets hungry enough, she will eat the wet and dry mixed.  
You can also try to exercise her some before you feed her to build up her appetite some.
