she constantly keeps an ear infection that smells and her eyes constantly matt up.

She has infections.  The only way to clear them up is with antibiotics from the vet.  Once cleared up, trim as much hair out of her ear as you can, and clean her ears once a week.  Use commercial preparations or just water with a little vinegar in it.  Clearing up the ear infections will reduce odor problems.  Bathe her as little as possible.  You will both enjoy regular brushing more instead.
