By "garden" hedgehogs, I assume you mean wild European hedgehogs, since hedgehogs are not native to the North American continent, and cannot survive the winters in most areas.  They eat insects primarily -- crickets, grubs, mealworms, earthworms, etc. -- but will also supplement their diet with bird's eggs, snails and slugs, baby mice, and also human garbage.
