Hi today I was just down doing some ground work and grooming him. And I brushed on his side and then I really really lightly put my hand on his fur so only the tip of his for was on my hand and he was flinching and he tuned around and looked at me with his ears back . And he also gets a sore back regularly and I dont know why because he wears a really thick saddle pad and a sculpting pad even if I just brush lightly over it he finds it sore I think anyway because he puts his ears back Please help because I want to help him so hes not in pain.

If this happens only after you rider, then I would say it is the saddle, if is sore when you don't ride then maybe something internal, it could be a bruise for getting kicked or could have rolled on a rock.  Use just one finger and run it around with slight pressure to see if you can locate the exact point of pain or injury, then you can tell if it is muscle or bone and then you can check it for healing or when it happens to try and locate the cause.

If it does not clear up and you can't locate it, call a vet so they can do a good check and xray if it is bone.
