I work in a rehoming centre and we have a 5 month old cross breed male, he was found as a stray. I have taught him to sit and wait at feeding times as he used to knock the bowl out of your hand. Now he will wait but as soon as you release him to eat he gobbles the food down really fast also when giving him treats he will end up catching your hand when taking it. Is there anyway to calm him down when it comes to food??

The dog was starved; what you see is the result.  Feed this dog twice a day (once is not enough).  Have him sit for his treats, toss the first part on the floor and then offer the second with an "easy".  If he grabs at it, simply move back a bit, ask him to sit again and repeat "easy"; do this several times in a row (the first time) until his eagerness is overcome by his cognition.  Slowly, he should learn that his food is HIS and he can eat it as fast as he wants, but the treats are YOURS and he must take them cautiously.  The FIRST TIME he responds with a cautious approach, praise him lavishly and offer him a second treat.  This might take some doing at first, but he should catch on.  So long as he becomes accustomed to two regular feedings, he should begin to calm around his food bowl, also.  DO NOT mess with his food for any reason (by removing it or playing with it).  Once it is HIS, it is HIS; those are the rules in the dog world.  The treats, however, are YOURS until you surrender them.  Any further questions, please repost.
