�Whole fish should not have any discolouration and must be free of ice crystals.
�In markets avoid buying packets that are kept above frost line.
�Fillets should have no drying out sign, or white spots or even dark brown spots.
�Use your nose as the ultimate tester. The odour of the fish will tell a lot about its quality and taste.
�If the oil or fat in the fish is rancid try avoiding it as it might not be fresh.
