Here again fish is imported into the region as another choice for dinner and flour tortillas are served alongside dishes regualrly.

In Mexico the natives genuinely love to cook fresh food but really stress the importance of variety, color, spice and flavor. Mexican chefs are habitually keen to ensure that the food is aesthetically pleasing as we should always remember that we eat with our eyes as well as our stomachs.
