Answer
Cat needs to be microchipped.  Rabies vac at least 30 days old and
less than 1 yr at time of travel.  APHIS 7001 international health
cert issued within 10 days of travel by an accredited vet and endorsed
by usda.  Also, most important.  EU form 998 English-Greek version
also endorsed by usda.  NO blood test required.
You should take cat with you as excess baggage vs cargo.  Much
cheaper and would clear customs with you.
Avoid going thru UK as they will require the cat to travel as cargo
ONLY.  I recommend Lufthansa, unless there might be a direct flight
from Houston to Athens.
All in all, should be very easy.
