I am building a plywood home for two redfoots who are outgrowing their 75 gallon home. To help prevent the wood from getting wet and molding, is it safe to use linoleum glued to the floor and walls( with proper bedding on top of it, of course). Their ages are 4 and 5 yrs old.

Linoleum, yes. Glue... maybe. I assume you are thinking aome sort of contact cement? Too many of the adhesives used generate nasty fumes that can take a long time to dissipate. Some of the low-fume or water-based formulas are better. You can also try silicone-based glues or even hot glue and 'tack' it into place.

People have also 'folded' the linoleum to the needed shape and just sealed the corners, or lined the table with heavy plastic stapled outside of the tortoise area, or... well,  there are a lot of options depending on what you are looking for.
