AnswerYou can check the gender using the pictures at http://www.rabbitnetwork.org/articles/sexing.shtml
A health check in general means checking to see there is no eye or nasal discharge, that the ears are clean, that the teeth are straight (pictures at http://islandgems.net/malocclusion.html), that there is no missing fur, the rear end is clean, and there are no lumps or bumps or sores.
It's hard to judge the age unless you have some familiarity with bunnies, it could be anywhere from a 4 month old abandoned Easter bunny to an older rabbit that someone decided to get rid of. Once they become adults, it is nearly impossible to tell their age.
There is some basic info on how to gain a rabbit's trust at http://fig.cox.miami.edu/Faculty/Dana/houserab.html It is going to depend on how the rabbit was treated. If he or she was abused, it will take quite a while. If not, the bunny may trust you fairly quickly.
